Aubergine and feta sand­wich(

Method: 1. Mix to­gether but­ter, pars­ley, salt and pep­per to make herb but­ter. 2. Slice bread in half hor­i­zon­tally and tear some out of in­side to cre­ate a shell. Spread herb but­ter in­side both slices. On bot­tom half of bun, layer aubergine, feta, toma­toes and some of rocket. Top with other half of bread and serve cold with re­main­ing rocket on side. In­gre­di­ents 30g but­ter 2 tsp finely chopped pars­ley 1 large whole­meal bun or piece of bavar­ian bread 80g aubergines, sliced and grilled 80g feta cheese 50g toma­toes, sliced and roasted* 80g rocket, tossed in bal­samic vine­gar salt and pep­per *To make roasted toma­toes, place toma­toes in a sin­gle layer on a bak­ing tray. Driz­zle with bal­samic vine­gar and olive oil and sea­son with salt and pep­per. Grill un­til slightly charred around edges and soft.
