Aubergine and feta sandwich(

Method: 1. Mix together butter, parsley, salt and pepper to make herb butter. 2. Slice bread in half horizontally and tear some out of inside to create a shell. Spread herb butter inside both slices. On bottom half of bun, layer aubergine, feta, tomatoes and some of rocket. Top with other half of bread and serve cold with remaining rocket on side. Ingredients 30g butter 2 tsp finely chopped parsley 1 large wholemeal bun or piece of bavarian bread 80g aubergines, sliced and grilled 80g feta cheese 50g tomatoes, sliced and roasted* 80g rocket, tossed in balsamic vinegar salt and pepper *To make roasted tomatoes, place tomatoes in a single layer on a baking tray. Drizzle with balsamic vinegar and olive oil and season with salt and pepper. Grill until slightly charred around edges and soft.
