Mozzerella and cour­gette grilled sand­wich

In­gre­di­ents 30g 2 tsp 1 por­tion 100g 200g 50g 1 tbsp 80g but­ter finely chopped pars­ley cia­batta bread, halved hor­i­zon­tally moz­zarella cheese, thinly sliced cour­gettes, thinly sliced and grilled slow roasted toma­toes lemon juice rocket, tossed in bal­samic vine­gar salt and pep­per Method: 1. Mix to­gether but­ter, pars­ley, salt and pep­per to cre­ate herb but­ter and spread over in­sides of cia­batta. 2. Layer moz­zarella, cour­gettes and toma­toes in­side bread, sea­son with salt and pep­per and driz­zle with lemon juice. Close sand­wich and grill un­til it gets grill marks. 3. Open sand­wich, add some rocket and serve im­me­di­ately with re­main­ing rocket on side.
