Tuna in hot multi- cereal loaf

Ingredients 2 tsp chopped capers 1/2 tsp crushed green peppercorns pinch chopped parsley 2 tsp chopped shallots 1/2 tin tuna in oil, drained 50g green apple, cored and finely chopped 2 tsp mayonnaise 4 slices multi-cereal bread 2 tsp butter 1 tbsp sun-dried tomatoes 30g oak leaf lettuce, tossed in balsamic vinegar salt and pepper Method: 1. Mix together capers, green peppercorns, parsley and shallots. Add tuna, apple, mayonnaise, salt and pepper and mix gently. 2. Spread butter on one side of bread. Layer tuna mixture and sun-dried tomatoes on two slices, then top with remaining bread to make two sandwiches. Grill until charred, then open and add lettuce. Serve hot.
