Tuna in hot multi- ce­real loaf

In­gre­di­ents 2 tsp chopped ca­pers 1/2 tsp crushed green pep­per­corns pinch chopped pars­ley 2 tsp chopped shal­lots 1/2 tin tuna in oil, drained 50g green ap­ple, cored and finely chopped 2 tsp may­on­naise 4 slices multi-ce­real bread 2 tsp but­ter 1 tbsp sun-dried toma­toes 30g oak leaf let­tuce, tossed in bal­samic vine­gar salt and pep­per Method: 1. Mix to­gether ca­pers, green pep­per­corns, pars­ley and shal­lots. Add tuna, ap­ple, may­on­naise, salt and pep­per and mix gen­tly. 2. Spread but­ter on one side of bread. Layer tuna mix­ture and sun-dried toma­toes on two slices, then top with re­main­ing bread to make two sand­wiches. Grill un­til charred, then open and add let­tuce. Serve hot.
