Prep time: 5 mins Cook­ing time: 45 mins plus chill­ing time

In­gre­di­ents 40g dates 400ml milk 100g fresh cream 100g sugar 30g rice

nuts and dates, to gar­nish Method: 1. Boil dates in wa­ter for 5 min­utes, then peel and re­move stones. Purée to make a smooth paste. 2. In a pan, heat to­gether milk, cream and sugar. When mix­ture comes to a gen­tle sim­mer, add rice and cook over a low heat, stir­ring oc­ca­sion­ally, un­til rice is done and mix­ture has a cus­tard-like con­sis­tency. 3. Place por­tion of date paste at bot­tom of serv­ing bowl and pour milk-rice mix­ture on top. Re­frig­er­ate un­til set. Gar­nish with nuts and dates and serve cold.
