Ingredients 40g dates 400ml milk 100g fresh cream 100g sugar 30g rice
nuts and dates, to garnish Method: 1. Boil dates in water for 5 minutes, then peel and remove stones. Purée to make a smooth paste. 2. In a pan, heat together milk, cream and sugar. When mixture comes to a gentle simmer, add rice and cook over a low heat, stirring occasionally, until rice is done and mixture has a custard-like consistency. 3. Place portion of date paste at bottom of serving bowl and pour milk-rice mixture on top. Refrigerate until set. Garnish with nuts and dates and serve cold.
