Kylie Minogue’s beef tourne­dos with olives

“Kylie loves tuck­ing into this French-in­spired dish af­ter a show,” says her per­sonal chef Giles Broe. “I use a lean cut of beef, and cook it for her so it’s juicy and doesn’t re­quire much chew­ing. She’s of­ten ex­hausted af­ter a show: this is the per­fect pro­tein-rich pick-me-up.”


(Serves 4) 4 large toma­toes 4 tbsp olive oil ½ tsp dried basil ½ tsp dried oregano ½ tsp dried thyme 20 stoned black olives


1. Slice each tomato into three, place on a grilling tray and brush with olive oil. Sprin­kle over dried herbs and sea­son. 2. Grill toma­toes un­til lightly browned. 3. Warm 2tbsp olive oil in fry­ing pan and add black olives and toma­toes. 4. Brush beef tourne­dos with an­chovy paste. Heat re­main­ing olive oil in an­other fry­ing pan and cook for 2-3 min­utes on each side. Do not sea­son. 5. Serve hot with toma­toes, olives and cook­ing juices.
