Kylie Minogue’s beef tournedos with olives
“Kylie loves tucking into this French-inspired dish after a show,” says her personal chef Giles Broe. “I use a lean cut of beef, and cook it for her so it’s juicy and doesn’t require much chewing. She’s often exhausted after a show: this is the perfect protein-rich pick-me-up.”
(Serves 4) 4 large tomatoes 4 tbsp olive oil ½ tsp dried basil ½ tsp dried oregano ½ tsp dried thyme 20 stoned black olives
1. Slice each tomato into three, place on a grilling tray and brush with olive oil. Sprinkle over dried herbs and season. 2. Grill tomatoes until lightly browned. 3. Warm 2tbsp olive oil in frying pan and add black olives and tomatoes. 4. Brush beef tournedos with anchovy paste. Heat remaining olive oil in another frying pan and cook for 2-3 minutes on each side. Do not season. 5. Serve hot with tomatoes, olives and cooking juices.
