Milk pudding with rose water

(serves 4-6)

Ingredient­s 1 cup rice

2 cups water

3 cups whole milk

3/4 cup granulated sugar

2 1/2 tbsp cornflour, dissolved in 3 tbsp warm milk

2 tbsp rose water

Method:

1. In a large, heavy-bottomed pan, cook rice in water over a high heat for 20 minutes or until tender. Add milk and sugar, turn heat down to low and simmer, stirring occasional­ly.

2. Simmer for 45 minutes or until creamy. Add cornflour solution and mix thoroughly.

3. Add rose water and bring to a boil for 1 minute. Remove from heat, leave to thicken for 5 minutes, then spoon into bowls. Serve hot or cold.
