Salsa and mojo sauce
(serves 4)

Ingredients For salsa: 110ml canned whole peeled tomatoes 6 tbsp finely chopped onion 1/2 tsp garlic salt 1/2 tsp ground cumin 1/2 tsp tabasco sauce 1 tomato, diced 1/2 cup finely diced celery 1 small jalapeno pepper, seeded and sliced For mojo sauce: 4 tbsp finely chopped onion 10 garlic cloves, thinly sliced 200ml virgin olive oil 4 tsp flour 1/2 tsp chopped oregano 2 tsp ground cumin 80ml orange juice 250ml lemon juice 150ml water Method: 1. To make salsa, purée together canned tomatoes with half the onion. Stir in remaining ingredients, cover and refrigerate for 2 hours. Stir well before serving. 2. 2. To make mojo sauce, sauté onion and garlic in 1 tbsp oil. Add flour and mix well. Add remaining ingredients and bring to rolling boil. Cook until slightly thickened. 3. 3. Serve salsa and mojo sauce with grilled steak.
