Bak­ing time: 20-25 mins In­gre­di­ents melted but­ter or oil, for greas­ing 500g flaky pas­try, de­frosted 4 x 100g white fish fil­lets 1 large lemon, juice and zest of 100g but­ter, di­vided into 4 por­tions 80ml pesto 1 egg, beaten Method 1. Pre­heat oven to 200°C and grease a bak­ing tray with melted but­ter or oil. 2. Roll pas­try out on a flour-sprin­kled sur­face and cut into four equal-sized rec­tan­gles. 3. Place a fish fil­let to one side of each piece of pas­try. Sea­son with salt, pep­per, juice and zest of lemon and place a piece of but­ter on top. Spoon a por­tion of pesto over fish. 4. Dab edges of pas­try with beaten egg. Fold pas­try over fish to form a par­cel and press pas­try edges to­gether with a fork to seal on all sides. 5. Place fish parcels on pre­pared bak­ing tray and bake for 20-25 min­utes or un­til cooked.
