Baking time: 20-25 mins Ingredients melted butter or oil, for greasing 500g flaky pastry, defrosted 4 x 100g white fish fillets 1 large lemon, juice and zest of 100g butter, divided into 4 portions 80ml pesto 1 egg, beaten Method 1. Preheat oven to 200°C and grease a baking tray with melted butter or oil. 2. Roll pastry out on a flour-sprinkled surface and cut into four equal-sized rectangles. 3. Place a fish fillet to one side of each piece of pastry. Season with salt, pepper, juice and zest of lemon and place a piece of butter on top. Spoon a portion of pesto over fish. 4. Dab edges of pastry with beaten egg. Fold pastry over fish to form a parcel and press pastry edges together with a fork to seal on all sides. 5. Place fish parcels on prepared baking tray and bake for 20-25 minutes or until cooked.
