Fattoush salad with burrata cheese
Prep time: 10 mins Gem lettuce, torn into small pieces 3 pitta breads, sliced into pieces, toasted lightly or fried 1 cucumber, diced 2 tomatoes, diced 1 bunch spring onions, chopped 1/2 bunch parsley, chopped 3 garlic cloves, crushed 1/2 cup lemon juice 3/4 cup olive oil 2 tbsp pomegranate molasses 1 tsp sumac 1/2 bunch fresh mint, chopped 300g fresh burrata cheese
1In a large bowl, combine lettuce, bread, cucumber, tomatoes, onions, and parsley together. Toss gently. 2To
prepare the dressing, in a small bowl combine garlic, lemon juice, olive oil, pomegranate molasses, sumac and mint. Mix well.
