Fat­toush salad with bur­rata cheese

Prep time: 10 mins Gem let­tuce, torn into small pieces 3 pitta breads, sliced into pieces, toasted lightly or fried 1 cu­cum­ber, diced 2 toma­toes, diced 1 bunch spring onions, chopped 1/2 bunch pars­ley, chopped 3 gar­lic cloves, crushed 1/2 cup lemon juice 3/4 cup olive oil 2 tbsp pome­gran­ate mo­lasses 1 tsp sumac 1/2 bunch fresh mint, chopped 300g fresh bur­rata cheese

1In a large bowl, com­bine let­tuce, bread, cu­cum­ber, toma­toes, onions, and pars­ley to­gether. Toss gen­tly. 2To

pre­pare the dress­ing, in a small bowl com­bine gar­lic, lemon juice, olive oil, pome­gran­ate mo­lasses, sumac and mint. Mix well.


cheese on top of salad, driz­zle with dress­ing and serve.
