Cucumber rolls with avocado hummus
Prep time: 10 mins 2 ripe avocados, peeled, stones removed and cut into cubes 1/2 lemon, juiced 4-5 tbsp extra virgin olive oil 3 garlic cloves, crushed 4 tbsp tahini (sesame paste) 2 tbsp ground cumin 4 tbsp hummus 1/2 tsp sumac 1 tbsp black sesame seeds, optional 1 cucumber, thinly sliced lenghthwise using a mandoline
prepare avocado hummus, purée avocado with lemon juice. Add olive oil, garlic, tahini, cumin, hummus and sumac and blend it again until mixture has a mayonnaise-like consistency. Add black sesame seeds, if using.
two slices of cucumber overlapping each other on a flat surface. Place a portion of avocado hummus on one end and then roll up. Repeat until you use up all the cucumber slices and hummus.
