Cu­cum­ber rolls with av­o­cado hum­mus

Prep time: 10 mins 2 ripe av­o­ca­dos, peeled, stones re­moved and cut into cubes 1/2 lemon, juiced 4-5 tbsp ex­tra vir­gin olive oil 3 gar­lic cloves, crushed 4 tbsp tahini (se­same paste) 2 tbsp ground cumin 4 tbsp hum­mus 1/2 tsp sumac 1 tbsp black se­same seeds, op­tional 1 cu­cum­ber, thinly sliced lenghth­wise us­ing a man­do­line

pre­pare av­o­cado hum­mus, purée av­o­cado with lemon juice. Add olive oil, gar­lic, tahini, cumin, hum­mus and sumac and blend it again un­til mix­ture has a may­on­naise-like con­sis­tency. Add black se­same seeds, if us­ing.

2Place

two slices of cu­cum­ber over­lap­ping each other on a flat sur­face. Place a por­tion of av­o­cado hum­mus on one end and then roll up. Re­peat un­til you use up all the cu­cum­ber slices and hum­mus.
