Choco­late cake with fruit

Cook­ing time: 30-40 mins In­gre­di­ents 500g fresh berries, chopped 100g dark choco­late, chopped 3/4 cup ground al­monds 2 cups flour 2 cups white sugar 6 tbsp cocoa 2 tsp bi­car­bon­ate of soda, sifted 160ml oil 2 tsp vanilla essence 2 tbsp vine­gar 2 cups cold wa­ter

yo­gurt ganache, to dec­o­rate Method 1. Pre­heat oven to 180oC and grease a roast­ing tin. 2. Mix to­gether berries, choco­late and al­monds. 3. Sift dry in­gre­di­ents in a sep­a­rate bowl and make a well in cen­tre of mix­ture. 4. In an­other bowl, whisk to­gether all liq­uid in­gre­di­ents then pour mix­ture into well. Whisk un­til blended. 5. Fold in berry mix­ture then trans­fer bat­ter to pre­pared roast­ing tin. Lightly tap tin on a work sur­face to re­move any air bub­bles. Bake for 30-40 min­utes or un­til a test­ing skewer comes out clean. 6. Al­low to cool, re­move from tin then cut into 32 squares. Dec­o­rate with yo­gurt ganache and berries if de­sired.
