Roasted baby vegetables
Prep time: 5 mins Cooking time: 30 mins Ingredients 200g mini asparagus 400g baby carrots 300g baby leeks, halved 350g baby beetroot, halved 300g Brussels sprouts olive oil, for drizzling sea salt and black pepper
Method 1. Preheat oven to 180°C. Place all vegetables on a large oven tray, drizzle with olive oil and season. Roast for 30 minutes. Serve hot or cold.
