Prep time: 5 mins Cook­ing time: 30 mins Ingredients 200g mini as­para­gus 400g baby car­rots 300g baby leeks, halved 350g baby beet­root, halved 300g Brussels sprouts olive oil, for driz­zling sea salt and black pep­per

Method 1. Pre­heat oven to 180°C. Place all veg­eta­bles on a large oven tray, driz­zle with olive oil and sea­son. Roast for 30 min­utes. Serve hot or cold.
