Chickpea and lentil salad

Ingredients 430g tinned chickpeas, drained and rinsed 1 cup lentils, cooked and drained 1 orange, peeled and segmented 1 onion, sliced 2 tbsp oil 2 tbsp lemon juice 1 orange, juice and zest of 4 tbsp chopped fresh mint leaves
Method 1. Combine chickpeas, lentils, orange and onion together. 2. Mix oil, lemon juice, orange juice and zest together and season with salt and pepper. Pour over chickpea mixture, stir in mint and serve cold.
