Chickpea and len­til salad

Ingredients 430g tinned chick­peas, drained and rinsed 1 cup lentils, cooked and drained 1 or­ange, peeled and seg­mented 1 onion, sliced 2 tbsp oil 2 tbsp lemon juice 1 or­ange, juice and zest of 4 tbsp chopped fresh mint leaves

Method 1. Com­bine chick­peas, lentils, or­ange and onion to­gether. 2. Mix oil, lemon juice, or­ange juice and zest to­gether and sea­son with salt and pep­per. Pour over chickpea mix­ture, stir in mint and serve cold.
