Cof­fee, or­ange and choco­late mousse

In­gre­di­ents 12 eggs 200g sugar 50g cocoa pow­der 500g choco­late, melted 110ml pre­pared cof­fee (Linizio Lungo rec­om­mended), cooled 370g cream, lightly whipped 3 or­anges, zest of choco­late shav­ings, fresh rasp­ber­ries and can­died or­ange zest, to gar­nish Method 1. Beat eggs and sugar un­til creamy, then slowly add cocoa pow­der, melted choco­late and cof­fee. Mix well. 2. Add whipped cream and or­ange zest and mix well. 3. Place in cups or moulds and re­frig­er­ate un­til set. 4. Gar­nish with choco­late shav­ings, fresh rasp­ber­ries and can­died or­ange zest.
