Crunchy let­tuce salad with whipped feta and cumin dress­ing

100g feta cheese, crum­bled 100g nat­u­ral lab­neh 1 tsp ground cumin 1/2 lemon, juiced olive oil (op­tional) 1 tsp cumin seeds Salad leaves, prefer­ably baby gem pars­ley leaves, to gar­nish wal­nuts, to gar­nish

1 In a food pro­ces­sor, blitz to­gether feta, lab­neh, ground cumin and lemon juice un­til smooth. If re­quired, add some olive oil to thin the dress­ing. Trans­fer to a bowl, taste and ad­just the sea­son­ing, adding sea salt, freshly ground black pep­per and ex­tra lemon juice as needed. (If you don’t want to use a food pro­ces­sor, mash in­gre­di­ents to­gether in a bowl with the back of a spoon then whisk well.)

2 Toast the cumin seeds in a small fry­ing pan over a medium heat, un­til the seeds are aro­matic and slightly darker in colour. Trans­fer to a dish to cool.

3 Toss the let­tuce in a large bowl with just enough of the dress­ing to coat the leaves. Sea­son the salad again if nec­es­sary and gar­nish with the toasted cumin seeds, pars­ley and wal­nuts.
