Crunchy lettuce salad with whipped feta and cumin dressing

100g feta cheese, crumbled 100g natural labneh 1 tsp ground cumin 1/2 lemon, juiced olive oil (optional) 1 tsp cumin seeds Salad leaves, preferably baby gem parsley leaves, to garnish walnuts, to garnish
1 In a food processor, blitz together feta, labneh, ground cumin and lemon juice until smooth. If required, add some olive oil to thin the dressing. Transfer to a bowl, taste and adjust the seasoning, adding sea salt, freshly ground black pepper and extra lemon juice as needed. (If you don’t want to use a food processor, mash ingredients together in a bowl with the back of a spoon then whisk well.)
2 Toast the cumin seeds in a small frying pan over a medium heat, until the seeds are aromatic and slightly darker in colour. Transfer to a dish to cool.
3 Toss the lettuce in a large bowl with just enough of the dressing to coat the leaves. Season the salad again if necessary and garnish with the toasted cumin seeds, parsley and walnuts.
