Cook­ing time: 25 mins In­gre­di­ents 2 tbsp olive oil 4 chicken breast fil­lets, cut into pieces 2 chicken or beef sausages, sliced 1 onion, sliced 2 gar­lic cloves, crushed 4 tsp smoked or plain pa­prika 1 red bell pep­per, sliced 1 tin chopped t oma­toes 4 tsp tomato paste 2-3 cour­gettes, sliced

fresh basil and cous­cous, to serve Method 1. Heat 1 1/2 tbsp oil in large pan and add chicken and sausages. Brown well then re­move. In a sep­a­rate pan, heat re­main­ing oil and sauté onion, then add gar­lic and sauté for a minute. Add pa­prika and pep­per and fry for another minute. Re­turn chicken and sausages to pan with toma­toes, tomato paste and cour­gettes. Add a lit­tle wa­ter if mix­ture seems too dry. Sea­son with salt and pep­per. Sim­mer uncovered for 10 min­utes. Serve with basil and cous­cous.
