Vegetable chilli con carne(

Cooking time: 20 mins Ingredients 2 tbsp oil 1 onion, chopped 1-2 garlic cloves, finely chopped 1 green bell pepper, diced 1/2 tsp chilli powder 1 tsp ground cumin 100g soy mince 1 tin chopped tomatoes 1 tin kidney beans, rinsed and drained 4 tbsp chopped fresh coriander
tortilla chips and avocado, to serve Method 1. Heat oil and sauté onion until soft. Add garlic and bell pepper. Sauté for a minute. Add spices and fry until fragrant. Add soy mince, tomatoes, kidney beans and water according to instruction on soy mince packet. Season and simmer for 10-15 minutes. Stir through coriander and serve with tortilla chips and sliced avocado.
