Cook­ing time: 20 mins In­gre­di­ents 2 tbsp oil 1 onion, chopped 1-2 gar­lic cloves, finely chopped 1 green bell pep­per, diced 1/2 tsp chilli pow­der 1 tsp ground cumin 100g soy mince 1 tin chopped toma­toes 1 tin kid­ney beans, rinsed and drained 4 tbsp chopped fresh co­rian­der

tor­tilla chips and avocado, to serve Method 1. Heat oil and sauté onion un­til soft. Add gar­lic and bell pep­per. Sauté for a minute. Add spices and fry un­til fragrant. Add soy mince, toma­toes, kid­ney beans and wa­ter ac­cord­ing to in­struc­tion on soy mince packet. Sea­son and sim­mer for 10-15 min­utes. Stir through co­rian­der and serve with tor­tilla chips and sliced avocado.
