Sweet­corn salsa

Cook­ing time: 10 mins In­gre­di­ents 1 fresh corn on the cob, trimmed 1/2 small red pep­per, very finely chopped 2 spring onions, finely sliced 2 tsp olive oil 1/2 tsp pa­prika 1 tbsp chopped fresh co­rian­der Method 1. Cook corn in boil­ing wa­ter for about 10 min­utes or un­til just ten­der, then set aside to cool. Strip corn from cob and place in mix­ing bowl. Add re­main­ing in­gre­di­ents and mix well. For a finer con­sis­tency, use a hand blender or food pro­ces­sor to chop in­gre­di­ents a lit­tle more, be­ing care­ful not to over process. The salsa should still be chunky and tex­tured. Sea­son be­fore serv­ing.
