Turkey & watercress salad

Cooking time: 3-4 mins Ingredients 2 tbsp plain flour 1 tsp paprika 1 tsp Cajun seasoning 1 tsp dried mixed herbs 4x170g skinned turkey breasts, cut into 1cm wide strips corn or rapeseed oil fresh watercress large red onion, sliced limes, juiced oranges, peeled and sliced, to serve 2 tbsp 80g 1 2 2 Method 1. Mix flour with paprika, seasoning, herbs, salt and pepper. Use mixture to coat strips of turkey breast. Pour oil into heavy-based non-stick frying pan, place over high heat. Add turkey and lower heat to medium. Fry turkey for 3-4 minutes, until crisp and golden. Meanwhile, make salad. Mix together watercress, onion, lime juice and season with black pepper. To serve, divide turkey between 4 plates, arrange orange slices on side and scatter salad on top.
