Tur­key & wa­ter­cress salad

Cook­ing time: 3-4 mins In­gre­di­ents 2 tbsp plain flour 1 tsp pa­prika 1 tsp Ca­jun sea­son­ing 1 tsp dried mixed herbs 4x170g skinned tur­key breasts, cut into 1cm wide strips corn or rape­seed oil fresh wa­ter­cress large red onion, sliced limes, juiced or­anges, peeled and sliced, to serve 2 tbsp 80g 1 2 2 Method 1. Mix flour with pa­prika, sea­son­ing, herbs, salt and pep­per. Use mix­ture to coat strips of tur­key breast. Pour oil into heavy-based non-stick fry­ing pan, place over high heat. Add tur­key and lower heat to medium. Fry tur­key for 3-4 min­utes, un­til crisp and golden. Mean­while, make salad. Mix to­gether wa­ter­cress, onion, lime juice and sea­son with black pep­per. To serve, di­vide tur­key be­tween 4 plates, ar­range orange slices on side and scat­ter salad on top.
