Sesame beef stir-fry

Ingredients 400g beef steak, thinly sliced pinch chilli flakes 3 tsp sugar 2 1/2 tbsp soy sauce 2 tbsp cider vinegar 1 cucumber, diced 2 tbsp sunflower or canola oil 1 onion, sliced 1 garlic clove, chopped 100g baby spinach 2 tbsp sesame seeds, toasted
basmati rice, steamed, to serve Method 1. Mix together beef, chilli flakes, 2 tsp sugar, 2 tbsp soy sauce and 1 tbsp vinegar. 2. In a separate bowl, mix together cucumber, remaining sugar, soy sauce and vinegar. Cover and refrigerate until ready to serve. 3. Heat oil in a wok or non-stick pan. Add onion and garlic and sauté for a minute. 4. Add beef and stir-fry for 3 minutes. Add spinach and stir-fry until just wilted. Stir in 1 tbsp sesame seeds. Serve with rice and cucumber salad, sprinkled with remaining sesame seeds.
