Se­same beef stir-fry

In­gre­di­ents 400g beef steak, thinly sliced pinch chilli flakes 3 tsp su­gar 2 1/2 tbsp soy sauce 2 tbsp cider vine­gar 1 cu­cum­ber, diced 2 tbsp sun­flower or canola oil 1 onion, sliced 1 gar­lic clove, chopped 100g baby spinach 2 tbsp se­same seeds, toasted

bas­mati rice, steamed, to serve Method 1. Mix to­gether beef, chilli flakes, 2 tsp su­gar, 2 tbsp soy sauce and 1 tbsp vine­gar. 2. In a sep­a­rate bowl, mix to­gether cu­cum­ber, re­main­ing su­gar, soy sauce and vine­gar. Cover and re­frig­er­ate un­til ready to serve. 3. Heat oil in a wok or non-stick pan. Add onion and gar­lic and sauté for a minute. 4. Add beef and stir-fry for 3 min­utes. Add spinach and stir-fry un­til just wilted. Stir in 1 tbsp se­same seeds. Serve with rice and cu­cum­ber salad, sprin­kled with re­main­ing se­same seeds.
