Lin­guine in car­bonara sauce

In­gre­di­ents 300g lin­guine 3 large eggs, lightly beaten 50ml milk or cream 2 car­rots, peeled and juli­enned 3 cour­gettes, juli­enned 1 small red pep­per, seeded and cut into thin strips 300g beef ham, torn into strips

Parme­san cheese and basil, to serve

Method 1. Bring a large pot of salted wa­ter to a boil. Add pasta and cook un­til al dente. Drain well. 2. Mix eggs and milk or cream to­gether and pour over warm pasta. Stir to coat pasta. Re­turn to a very low heat and al­low sauce to thicken. 3. Lightly steam or mi­crowave veg­eta­bles for a few min­utes then stir into pasta with beef ham. Serve gar­nished with Parme­san cheese and basil.
