Linguine in carbonara sauce

Ingredients 300g linguine 3 large eggs, lightly beaten 50ml milk or cream 2 carrots, peeled and julienned 3 courgettes, julienned 1 small red pepper, seeded and cut into thin strips 300g beef ham, torn into strips
Parmesan cheese and basil, to serve
Method 1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain well. 2. Mix eggs and milk or cream together and pour over warm pasta. Stir to coat pasta. Return to a very low heat and allow sauce to thicken. 3. Lightly steam or microwave vegetables for a few minutes then stir into pasta with beef ham. Serve garnished with Parmesan cheese and basil.
