In­gre­di­ents 1 pack ready-made puff pas­try 12 large brown mush­rooms 1 large egg, lightly beaten 200g feta cheese, crum­bled 100ml pesto, to serve

salad, to serve Method 1. Pre­heat oven to 200°C. Us­ing a cookie cut­ter, cut out pas­try cir­cles about the same size as mush­rooms. Place on a lined bak­ing sheet and brush with half egg. 2. Clean mush­rooms with a damp cloth and cut out stems. Place mush­rooms on pas­try discs. 3. Mix feta with re­main­ing egg and sea­son with salt and freshly ground pep­per. Spoon feta into mush­rooms and press lightly. 4. Bake tarts for 15-20 mins or un­til pas­try is golden and puffed. 5. Gar­nish with pesto and serve im­me­di­ately with salad.
