Ingredients 1 pack ready-made puff pastry 12 large brown mushrooms 1 large egg, lightly beaten 200g feta cheese, crumbled 100ml pesto, to serve
salad, to serve Method 1. Preheat oven to 200°C. Using a cookie cutter, cut out pastry circles about the same size as mushrooms. Place on a lined baking sheet and brush with half egg. 2. Clean mushrooms with a damp cloth and cut out stems. Place mushrooms on pastry discs. 3. Mix feta with remaining egg and season with salt and freshly ground pepper. Spoon feta into mushrooms and press lightly. 4. Bake tarts for 15-20 mins or until pastry is golden and puffed. 5. Garnish with pesto and serve immediately with salad.
