Honey roasted chicken

In­gre­di­ents 4-8 chicken joints 2 tbsp olive oil sprig thyme 4 tbsp honey 100ml chicken stock baby pota­toes and veg­eta­bles, steamed to serve

Method 1. Pre­heat oven to 190°C. Ar­range chicken joints in an oven­proof bak­ing dish. Add olive oil, thyme and sea­son well with salt and freshly ground pep­per. 2. Mix honey and stock to­gether and pour into dish. Roast in oven, bast­ing chicken ev­ery 10 min­utes with dish juices, for about 40 min­utes or un­til golden and cooked through. 3. Serve with steamed pota­toes and veg­eta­bles.
