Honey roasted chicken

Ingredients 4-8 chicken joints 2 tbsp olive oil sprig thyme 4 tbsp honey 100ml chicken stock baby potatoes and vegetables, steamed to serve
Method 1. Preheat oven to 190°C. Arrange chicken joints in an ovenproof baking dish. Add olive oil, thyme and season well with salt and freshly ground pepper. 2. Mix honey and stock together and pour into dish. Roast in oven, basting chicken every 10 minutes with dish juices, for about 40 minutes or until golden and cooked through. 3. Serve with steamed potatoes and vegetables.
