Date drop cookies
Camera Press Prep time: 15 mins Baking time: 15 mins Ingredients 180g all-purpose flour 1 tsp bicarbonate of soda 1 tsp baking powder pinch salt 1 extra large egg 60g butter, at room temperature 125ml sour cream 100g brown sugar 60g ground almonds 250g pitted dates, chopped Method 1. Preheat oven to 180°C. Line and grease two large baking sheets. In a large mixing bowl, sift together flour, bicarbonate of soda, baking powder and salt. In a separate bowl, beat together egg, butter and sour cream, then add brown sugar before combing with flour mixture. Add ground almonds and chopped dates and mix. Spoon dollops of mixture on to baking sheets and bake for 15 mins or until golden. Cool on a wire rack then serve.
