Cam­era Press Prep time: 15 mins Bak­ing time: 15 mins Ingredients 180g all-pur­pose flour 1 tsp bi­car­bon­ate of soda 1 tsp bak­ing pow­der pinch salt 1 ex­tra large egg 60g but­ter, at room tem­per­a­ture 125ml sour cream 100g brown sugar 60g ground al­monds 250g pit­ted dates, chopped Method 1. Pre­heat oven to 180°C. Line and grease two large bak­ing sheets. In a large mix­ing bowl, sift to­gether flour, bi­car­bon­ate of soda, bak­ing pow­der and salt. In a sep­a­rate bowl, beat to­gether egg, but­ter and sour cream, then add brown sugar be­fore comb­ing with flour mix­ture. Add ground al­monds and chopped dates and mix. Spoon dol­lops of mix­ture on to bak­ing sheets and bake for 15 mins or un­til golden. Cool on a wire rack then serve.
