Vanilla biscuits with dried fruit
(makes about 70)

Refrigeration time: 30 mins Ingredients 125g butter, 110g sugar 2 tsp vanilla essence 1 large egg, at room temperature 270g all-purpose flour 1 tsp baking powder 1 tbsp milk, if required 1 cup dried fruit, such as apricots and cranberries Method 1. Preheat oven to 180°C and line a baking sheet with greaseproof paper. Cream butter and sugar together until light. Add vanilla essence and egg and mix to combine. Add flour and baking powder and stir to form a soft dough. Mix in milk if dough is too stiff. Work dried fruit into dough. Cover in clingfilm and chill for 30 minutes. Roll dough out on a lightly floured surface and cut into shapes with a cookie cutter. Place on baking sheet and bake for 8-10 minutes, or until golden. Cool on a wire rack then serve.
