Vanilla bis­cuits with dried fruit

Re­frig­er­a­tion time: 30 mins Ingredients 125g but­ter, 110g sugar 2 tsp vanilla essence 1 large egg, at room tem­per­a­ture 270g all-pur­pose flour 1 tsp bak­ing pow­der 1 tbsp milk, if re­quired 1 cup dried fruit, such as apri­cots and cran­ber­ries Method 1. Pre­heat oven to 180°C and line a bak­ing sheet with grease­proof pa­per. Cream but­ter and sugar to­gether un­til light. Add vanilla essence and egg and mix to com­bine. Add flour and bak­ing pow­der and stir to form a soft dough. Mix in milk if dough is too stiff. Work dried fruit into dough. Cover in cling­film and chill for 30 min­utes. Roll dough out on a lightly floured sur­face and cut into shapes with a cookie cut­ter. Place on bak­ing sheet and bake for 8-10 min­utes, or un­til golden. Cool on a wire rack then serve.
