Bak­ing time: 10-12 mins Ingredients 200g all-pur­pose flour 1/2 tsp cream of tar­tar 1/2 tsp bak­ing soda 2 tsp finely ground gin­ger pinch salt 125g but­ter, at room tem­per­a­ture 125g caster sugar 2 tbsp golden syrup 1 tsp finely grated lime zest 1 egg yolk Method 1. Pre­heat oven to 180°C and line two bak­ing sheets with grease­proof pa­per. Sift dry ingredients to­gether in a mix­ing bowl. In a sep­a­rate bowl, cream but­ter and sugar to­gether un­til light and fluffy, then stir in golden syrup, lime zest and egg yolk. Add dry ingredients and beat to­gether un­til mixed thor­oughly. Spoon out tea­spoon­fuls of mix­ture, roll into balls and place on lined bak­ing sheets. Flat­ten each ball with palm of your hand. Bake for 10-12 mins or un­til golden brown. Cool snaps on a wire rack then serve. 2. 3.
