Baking time: 10-12 mins Ingredients 200g all-purpose flour 1/2 tsp cream of tartar 1/2 tsp baking soda 2 tsp finely ground ginger pinch salt 125g butter, at room temperature 125g caster sugar 2 tbsp golden syrup 1 tsp finely grated lime zest 1 egg yolk Method 1. Preheat oven to 180°C and line two baking sheets with greaseproof paper. Sift dry ingredients together in a mixing bowl. In a separate bowl, cream butter and sugar together until light and fluffy, then stir in golden syrup, lime zest and egg yolk. Add dry ingredients and beat together until mixed thoroughly. Spoon out teaspoonfuls of mixture, roll into balls and place on lined baking sheets. Flatten each ball with palm of your hand. Bake for 10-12 mins or until golden brown.
