Pep­per crab

(serves 4) In­gre­di­ents 50g ghee (clar­i­fied but­ter) 30g gar­lic, chopped 50g shal­lots, chopped 1kg mud crab, cut and cleaned pinch salt pinch su­gar 1 tsp crushed black pep­per 50g frozen but­ter 40g spring onions, chopped Method 1. Heat ghee in pan, add gar­lic and shal­lots and sauté un­til shal­lots are trans­par­ent. Add crab and sea­son­ing and cook over high heat for 3-4 min­utes or un­til crab is done. Add frozen but­ter and spring onion and re­move from heat. Al­low but­ter to melt be­fore serv­ing.
