(serves 4) Ingredients 50g ghee (clarified butter) 30g garlic, chopped 50g shallots, chopped 1kg mud crab, cut and cleaned pinch salt pinch sugar 1 tsp crushed black pepper 50g frozen butter 40g spring onions, chopped Method 1. Heat ghee in pan, add garlic and shallots and sauté until shallots are transparent. Add crab and seasoning and cook over high heat for 3-4 minutes or until crab is done. Add frozen butter and spring onion and remove from heat. Allow butter to melt before serving.
