Tiramisu with white chocolate shavings
Prep time: 15 mins Chilling time: overnight Serves 6 6 eggs, separated 5 tbsp caster sugar 400g mascarpone 200ml double cream, slightly whipped 1 packet sponge fingers 100ml coffee (made with 1 tbsp instant coffee and 100ml water) 100g white chocolate shavings and blueberries, to serve
1 Whisk together the egg yolks and sugar until pale, thick and creamy. Stir in the mascarpone and mix well. Fold in the double cream.
2 In a large clean bowl, whisk the egg whites until soft peaks form then fold them into the mascarpone mixture.
3 Arrange sponge fingers in a single layer in 6 individual bowls or glasses. Drizzle coffee over the biscuits.
4 Divide the mascarpone mixture evenly between the glasses, spooning each portion over the soaked biscuits.
5 Chill the tiramisu for a couple of hours or even overnight.
6 To serve, garnish with chocolate and blueberries.
