Tiramisu with white choco­late shav­ings

Prep time: 15 mins Chill­ing time: overnight Serves 6 6 eggs, sep­a­rated 5 tbsp caster su­gar 400g mas­car­pone 200ml dou­ble cream, slightly whipped 1 packet sponge fin­gers 100ml cof­fee (made with 1 tbsp in­stant cof­fee and 100ml wa­ter) 100g white choco­late shav­ings and blue­ber­ries, to serve

1 Whisk to­gether the egg yolks and su­gar un­til pale, thick and creamy. Stir in the mas­car­pone and mix well. Fold in the dou­ble cream.

2 In a large clean bowl, whisk the egg whites un­til soft peaks form then fold them into the mas­car­pone mix­ture.

3 Ar­range sponge fin­gers in a sin­gle layer in 6 in­di­vid­ual bowls or glasses. Driz­zle cof­fee over the bis­cuits.

4 Di­vide the mas­car­pone mix­ture evenly be­tween the glasses, spooning each por­tion over the soaked bis­cuits.

5 Chill the tiramisu for a cou­ple of hours or even overnight.

6 To serve, gar­nish with choco­late and blue­ber­ries.
