Fragrant Indian kebabs
Prep time: 30 mins Cooking time: 30 mins Serves 4-6
4 tsp chopped fresh coriander 1 tsp cumin seeds 3 garlic cloves, finely chopped 3 green chillies, broken 500g minced beef, rinsed under cold water 1 tsp salt 1/2 tsp chilli powder 1/2 tsp cinnamon powder 1/2 tsp turmeric powder 1 onion, grated 3 tbsp oil 2 tsp chopped fresh mint pita breads and dips of your choice, to serve
1 Mix together coriander, cumin, garlic and chillies. Pound to a paste in a mortar.
2 Mix the mince with the spice paste. Add salt, chilli, cinnamon powder, turmeric and half the onion.
3 Heat a little of the oil and sauté the rest of the onion. Leave to cool then add to the mince with the mint.
4 Shape the mince mixture into walnut-size balls and chill for 15 mins. Heat the remaining oil and fry the meatballs until just done.
5 Thread the meatballs on to kebab skewers (3-4 on each) and serve with pita bread and dips.
