Fragrant In­dian ke­babs

4 tsp chopped fresh co­rian­der 1 tsp cumin seeds 3 gar­lic cloves, finely chopped 3 green chill­ies, bro­ken 500g minced beef, rinsed un­der cold wa­ter 1 tsp salt 1/2 tsp chilli pow­der 1/2 tsp cin­na­mon pow­der 1/2 tsp turmeric pow­der 1 onion, grated 3 tbsp oil 2 tsp chopped fresh mint pita breads and dips of your choice, to serve

METHOD

1 Mix to­gether co­rian­der, cumin, gar­lic and chill­ies. Pound to a paste in a mor­tar.

2 Mix the mince with the spice paste. Add salt, chilli, cin­na­mon pow­der, turmeric and half the onion.

3 Heat a lit­tle of the oil and sauté the rest of the onion. Leave to cool then add to the mince with the mint.

4 Shape the mince mix­ture into wal­nut-size balls and chill for 15 mins. Heat the re­main­ing oil and fry the meat­balls un­til just done.

5 Thread the meat­balls on to ke­bab skew­ers (3-4 on each) and serve with pita bread and dips.
