Beef stir-fry

Prep time: 10 mins Mar­i­nat­ing time: 1 hour Cook­ing time: 10 mins Serves 4

FOR THE MARI­NADE

2 tbsp le­mon juice 5 tbsp soy sauce 1 tbsp honey 3 cm piece of gin­ger, grated 1 green chilli, thinly sliced

FOR THE STIR-FRY

400g beef fil­let, sliced into thin strips 2 tbsp se­same oil 1 yel­low, green and red bell pep­per, sliced into strips, plus ex­tra to gar­nish 2 gar­lic cloves, thinly sliced 1 onion, finely sliced 1 75g noo­dles, cooked

1 In a medium bowl, whisk to­gether all the mari­nade in­gre­di­ents.

2 Coat the beef with the mari­nade and set it aside for 1 hour.

3 Heat the oil in a wok over high heat un­til it is nearly smok­ing.

4 As the oil is heat­ing, re­move the beef from the mari­nade, re­serv­ing the mari­nade. Pat the beef dry and sep­a­rate it into small batches. Cook each batch for no more than 1 minute then trans­fer to a bowl.

5 Now add the pep­pers and gar­lic to the pan and stir-fry for a few min­utes. Re­turn the beef to the pan with a lit­tle of the re­served mari­nade. Add the onion and toss ev­ery­thing to­gether. Cook for few min­utes more. Add the noo­dles, sea­son to taste and serve hot, gar­nished with bell pep­pers.
