Ba­nana and date loaf

2 very ripe bananas, plus 1 ba­nana, to gar­nish 1 tsp bi­car­bon­ate of soda 2 tbsp hot milk 125g but­ter or mar­garine 175g caster su­gar 2 eggs 225g plain flour, sifted 1 tsp bak­ing pow­der 125g dates, pit­ted and chopped


1 Pre­heat oven to 180°C and grease and line a 1kg loaf tin.

2 Mash bananas in a mix­ing bowl us­ing an elec­tric mixer.

3 Dis­solve bi­car­bon­ate of soda in hot milk and mix with bananas.

4 Add but­ter or mar­garine, caster su­gar, eggs, flour and bak­ing pow­der, and beat well for 2 min­utes un­til thor­oughly com­bined.

5 Stir in dates. Turn mix­ture into pre­pared loaf tin and bake for 1 hour 15 min­utes, or un­til loaf has risen and a skewer in­serted into cen­tre comes out clean.

6 Turn out on to a wire rack and leave to cool com­pletely be­fore serv­ing, gar­nished with sliced ba­nana.
