Banana and date loaf

2 very ripe bananas, plus 1 banana, to garnish 1 tsp bicarbonate of soda 2 tbsp hot milk 125g butter or margarine 175g caster sugar 2 eggs 225g plain flour, sifted 1 tsp baking powder 125g dates, pitted and chopped
1 Preheat oven to 180°C and grease and line a 1kg loaf tin.
2 Mash bananas in a mixing bowl using an electric mixer.
3 Dissolve bicarbonate of soda in hot milk and mix with bananas.
4 Add butter or margarine, caster sugar, eggs, flour and baking powder, and beat well for 2 minutes until thoroughly combined.
5 Stir in dates. Turn mixture into prepared loaf tin and bake for 1 hour 15 minutes, or until loaf has risen and a skewer inserted into centre comes out clean.
6 Turn out on to a wire rack and leave to cool completely before serving, garnished with sliced banana.
