Fruit and wal­nut loaf

85g but­ter 115g caster su­gar 1 large egg, beaten 115g self-rais­ing flour 115g whole­wheat flour 1/2 tsp bak­ing pow­der 200ml skimmed milk 200g fresh dates, pit­ted and chopped into small pieces 115g wal­nut pieces, roughly chopped

METHOD

1 Pre­heat oven to 180°C and grease a 900g loaf tin.

2 Cream but­ter and su­gar to­gether and mix in egg.

3 Mix in self-rais­ing and whole­wheat flours and bak­ing pow­der, and stir in milk un­til mix­ture is a thick con­sis­tency. 4 Add fruit and nuts and mix. 5 Spoon mix­ture into pre­pared loaf tin and bake for 1 hour or un­til loaf has risen and a skewer in­serted into cen­tre comes out clean.

6 Turn out on to a wire rack and leave to cool com­pletely be­fore slic­ing.
