Oys­ters with soy and chilli sauce

12 oys­ters, shucked (ask your fish­mon­ger to pre­pare them) Bunch of curry leaves Bunch of chives, finely chopped 1 red chilli, finely chopped 1 lemon, sliced FOR THE SAUCE, MIX TO­GETHER 1 gar­lic clove, minced 1cm piece of gin­ger, finely chopped 1 tbsp soy sauce 4 spring onions, finely sliced 1 red chilli, finely chopped 2 tbsp sesame oil

1 Place oys­ters on a plat­ter of curry leaves and driz­zle sauce over.

2 Gar­nish with chives, chilli and lemon and serve im­me­di­ately.
