Prep time: 5 mins Cook­ing time: 30 mins Serves 2 Pinch of saf­fron 2 tsp rose wa­ter 3 1/2 tbsp sugar 2 tbsp wa­ter 1 cup milk 3 tbsp cream 4 slices of white or brown bread 2 tbsp ghee 3-4 al­monds, blanched and sliced 3-4 pis­ta­chios, sliced

1 Soak the saf­fron in the rose wa­ter. Pre­heat the oven to 180°C. 2 Make a thin syrup of sugar with the wa­ter and set aside. 3 Bring the milk and cream to a boil in a heavy-bot­tomed pan and then let it sim­mer un­til the mix­ture re­duces to half its orig­i­nal quan­tity. 4 Cut discs from the bread slices. Heat the ghee in a non-stick pan and shal­low-fry the bread discs un­til slightly brown. Soak them in the sugar syrup for 30 sec­onds. Drain and place on a bak­ing tray.

5 Pour the thick­ened milk over the fried bread slices. Sprin­kle with sliced nuts and driz­zle with saf­fron and rose wa­ter. Place the tray in the pre­heated oven and bake for 5 to 7 min­utes or un­til the milk turns golden brown. Serve warm.
