Double ka meetha
Prep time: 5 mins Cooking time: 30 mins Serves 2 Pinch of saffron 2 tsp rose water 3 1/2 tbsp sugar 2 tbsp water 1 cup milk 3 tbsp cream 4 slices of white or brown bread 2 tbsp ghee 3-4 almonds, blanched and sliced 3-4 pistachios, sliced
1 Soak the saffron in the rose water. Preheat the oven to 180°C. 2 Make a thin syrup of sugar with the water and set aside. 3 Bring the milk and cream to a boil in a heavy-bottomed pan and then let it simmer until the mixture reduces to half its original quantity. 4 Cut discs from the bread slices. Heat the ghee in a non-stick pan and shallow-fry the bread discs until slightly brown. Soak them in the sugar syrup for 30 seconds. Drain and place on a baking tray.
5 Pour the thickened milk over the fried bread slices. Sprinkle with sliced nuts and drizzle with saffron and rose water. Place the tray in the preheated oven and bake for 5 to 7 minutes or until the milk turns golden brown. Serve warm.
