Beef salad with spicy dressing
Prep time: 10 mins Marinating time: 30 mins Cooking time: 15 mins Serves 4
700g beef rump steak, at room temperature baby gem lettuce, to serve 1/2 red onion, sliced, to garnish
FOR THE MARINADE 20g coriander 3 garlic cloves 1 lemon grass stalk, chopped 3 tbsp soy sauce 4 tbsp honey
FOR THE DRESSING 1 red chilli 10g mint leaves 2 garlic cloves, minced 2 tbsp apple cider vinegar 4 tbsp pineapple juice 2 tbsp fish sauce 3 tbsp golden brown sugar 50g roasted salted peanuts 30g chopped coriander
1 Place all ingredients for marinade in a blender and blitz until smooth. Pour over meat and allow to stand for 30 minutes.
2 Meanwhile, to prepare dressing, blitz together all ingredients until well combined and set aside.
3 Heat griddle pan until very hot, then cook steak for 4-5 minutes on each side or until desired doneness. Remove, allow to rest for 5 minutes and slice.
4 To serve, place baby gem leaves on a platter, top with sliced beef and pour over dressing. Garnish with sliced red onion and serve immediately.
