Chilli, honey and coriander marinated prawns
Prep time: 5 mins Marinating time: at least 4 hours Cooking time: 4-6 mins Makes 12 1 red chilli, deseeded and finely chopped 1 tbsp olive oil 2 tbsp soy sauce 2 limes, juice and zest of 1 tbsp honey 2 tbsp chopped coriander 12 tiger prawns, shells removed and deveined, with tails intact 12 skewers, soaked in water 1Mix
together, chilli, oil, soy sauce, lime juice and zest, honey and coriander in a bowl. 2Add
prawns to the mixture and toss well to ensure they are evenly covered with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight. 3Skewer
the prawns and barbecue over hot coals for 4-6 mins, turning and brushing with the marinade frequently, until the prawns are golden and slightly charred. Serve with salad.
