Chilli, honey and co­rian­der mar­i­nated prawns

Prep time: 5 mins Mar­i­nat­ing time: at least 4 hours Cook­ing time: 4-6 mins Makes 12 1 red chilli, de­seeded and finely chopped 1 tbsp olive oil 2 tbsp soy sauce 2 limes, juice and zest of 1 tbsp honey 2 tbsp chopped co­rian­der 12 tiger prawns, shells re­moved and de­veined, with tails in­tact 12 skew­ers, soaked in wa­ter 1Mix

to­gether, chilli, oil, soy sauce, lime juice and zest, honey and co­rian­der in a bowl. 2Add

prawns to the mix­ture and toss well to en­sure they are evenly cov­ered with the mari­nade. Cover and re­frig­er­ate for at least 4 hours, prefer­ably overnight. 3Skewer

the prawns and bar­be­cue over hot coals for 4-6 mins, turn­ing and brush­ing with the mari­nade fre­quently, un­til the prawns are golden and slightly charred. Serve with salad.
