Halloumi, basil, and mixed cherry tomato skewers

together the lemon juice, olive oil, soy sauce and garlic. 2Thread
the skewers, starting with a cube of cheese, then a cherry tomato, followed by a piece of spring onion and then a basil leaf. Repeat the process on the same skewer, ending with a cube of cheese. Repeat with the rest of the skewers. Brush skewers with the marinade. 3Cook
skewers on the barbecue over a high heat for 4 mins, turning every 30 seconds as the tomatoes begin to blister and the cheese turns golden brown. Serve with balsamic dressing and crusty bread.
