Hal­loumi, basil, and mixed cherry tomato skew­ers

Prep time: 15 mins Cook­ing time: 4 mins Makes 12 2 lemons, juiced 5 tbsp olive oil 2 tbsp soy sauce 2 gar­lic cloves, minced 300g hal­loumi cheese, cut into small cubes 24 red and yel­low cherry toma­toes 6 spring onions, cut into 24 pieces 24 basil leaves 12 wooden skew­ers, soaked in wa­ter 1Mix

to­gether the lemon juice, olive oil, soy sauce and gar­lic. 2Thread

the skew­ers, start­ing with a cube of cheese, then a cherry tomato, fol­lowed by a piece of spring onion and then a basil leaf. Re­peat the process on the same skewer, end­ing with a cube of cheese. Re­peat with the rest of the skew­ers. Brush skew­ers with the mari­nade. 3Cook

skew­ers on the bar­be­cue over a high heat for 4 mins, turn­ing ev­ery 30 sec­onds as the toma­toes be­gin to blis­ter and the cheese turns golden brown. Serve with bal­samic dress­ing and crusty bread.
