Beef bacon and egg bake
Prep time: 5 mins Cooking time: 15 mins Serves 4-6 oil, for greasing 250g beef bacon strips 12 spring onions, finely chopped About 20 cherry tomatoes 6-8 extra large eggs Toasted bread and grated Cheddar cheese, to serve
1 Preheat oven to 200°C and grease a muffin pan with oil or non-stick spray.
2 Fill 6-8 muffin pan hollows with beef bacon and equal amounts of spring onions and cherry tomatoes.
3 Break one egg into each hollow and season with salt and freshly ground black pepper.
4 Bake for about 15 minutes or until cooked. Remove egg bakes with a blunt knife and serve with toast and grated cheese.
