Beef ba­con and egg bake

Prep time: 5 mins Cook­ing time: 15 mins Serves 4-6 oil, for greas­ing 250g beef ba­con strips 12 spring onions, finely chopped About 20 cherry toma­toes 6-8 ex­tra large eggs Toasted bread and grated Ched­dar cheese, to serve


1 Pre­heat oven to 200°C and grease a muf­fin pan with oil or non-stick spray.

2 Fill 6-8 muf­fin pan hol­lows with beef ba­con and equal amounts of spring onions and cherry toma­toes.

3 Break one egg into each hol­low and sea­son with salt and freshly ground black pep­per.

4 Bake for about 15 min­utes or un­til cooked. Re­move egg bakes with a blunt knife and serve with toast and grated cheese.
