Crispy Thai beef and glass noo­dles

4 tbsp soy sauce 1 tbsp su­gar 200g beef fil­let, sliced 1 tbsp corn oil 200g glass noo­dles, cooked 4 radishes, thinly sliced 1/2 cour­gette, sliced length­ways 3 tbsp toasted cashews 2 cherry toma­toes, halved FOR THE SAUCE, MIX TO­GETHER: 2 tbsp su­gar 1 tsp salt 1/2 tsp ground black pep­per 3 tbsp oil 1 tbsp dark se­same oil 3 tbsp vine­gar 1Mix

to­gether soy sauce and su­gar in a wide bowl and mar­i­nate beef in mix­ture for 10 mins. Re­move from mari­nade and pat dry. 2Warm

oil in a wok over high heat and fry beef un­til crispy. 3Mix

to­gether all in­gre­di­ents and serve at room tem­per­a­ture.
