Prep time: 10 mins Cook­ing time: 10 mins Serves 4 400g as­para­gus, trimmed 4 tbsp ex­tra-vir­gin olive oil 1 gar­lic clove, minced 1 red chilli, de­seeded and finely chopped 200g medium-size prawns, shelled and cooked 400g cooked penne (or any pasta of your choice) Lemon juice Fresh pars­ley, chopped to gar­nish 1Bring

a pan of salted wa­ter to the boil. Add as­para­gus and boil for 3 mins. Re­move and plunge into ice wa­ter. 2In

a pan, warm olive oil over medium-high heat. Sauté gar­lic and chilli for 2 mins then add as­para­gus and prawns. 3Add

pasta and mix well. Fin­ish with a squeeze of lemon juice and gar­nish with chopped pars­ley. Serve warm.
