Asparagus, chilli and prawn penne
Prep time: 10 mins Cooking time: 10 mins Serves 4 400g asparagus, trimmed 4 tbsp extra-virgin olive oil 1 garlic clove, minced 1 red chilli, deseeded and finely chopped 200g medium-size prawns, shelled and cooked 400g cooked penne (or any pasta of your choice) Lemon juice Fresh parsley, chopped to garnish 1Bring
a pan of salted water to the boil. Add asparagus and boil for 3 mins. Remove and plunge into ice water. 2In
a pan, warm olive oil over medium-high heat. Sauté garlic and chilli for 2 mins then add asparagus and prawns. 3Add
pasta and mix well. Finish with a squeeze of lemon juice and garnish with chopped parsley. Serve warm.
