Chicken stew with grapes

Prep time: 25 mins Cook­ing time: 50 mins Serves 4-6 1 tbsp but­ter 1 tbsp oil 8 chicken drum­sticks and thighs 3 large gar­lic cloves, chopped 1 small red onion, cut into wedges 1 cup seed­less red grapes 100ml chicken stock 1 tbsp bal­samic vine­gar 2 sprigs rose­mary or thyme


1 Pre­heat oven to 180°C. Heat but­ter and oil to­gether un­til but­ter has melted and fry chicken pieces un­til golden brown. Re­move from pan and set aside.

2 Add gar­lic and onion to same pan and sauté un­til glossy. Add grapes and fry for an­other 2 min­utes.

3 Pour chicken stock and vine­gar into pan, re­turn chicken to pan and bring to a boil. Sea­son with salt, pep­per and rose­mary or thyme. Bake in pre­heated oven for 40 min­utes or un­til chicken is cooked and ten­der. Serve with creamy mashed pota­toes.
