Chicken stew with grapes
Prep time: 25 mins Cooking time: 50 mins Serves 4-6 1 tbsp butter 1 tbsp oil 8 chicken drumsticks and thighs 3 large garlic cloves, chopped 1 small red onion, cut into wedges 1 cup seedless red grapes 100ml chicken stock 1 tbsp balsamic vinegar 2 sprigs rosemary or thyme
1 Preheat oven to 180°C. Heat butter and oil together until butter has melted and fry chicken pieces until golden brown. Remove from pan and set aside.
2 Add garlic and onion to same pan and sauté until glossy. Add grapes and fry for another 2 minutes.
3 Pour chicken stock and vinegar into pan, return chicken to pan and bring to a boil. Season with salt, pepper and rosemary or thyme. Bake in preheated oven for 40 minutes or until chicken is cooked and tender. Serve with creamy mashed potatoes.
