Marinated aubergine strips
Prep time: 15 mins Cooking time: 20 mins, plus 1 hour standing time Serves 4-6
2 large aubergines Olive oil, as needed 3 fresh bay leaves, crushed 1 lemon, juice and zest of 3 garlic cloves 1 tbsp balsamic vinegar 1 tbsp red grape vinegar Pinch of sugar 2 tbsp currants 1-3 red chillies, chopped 3 tbsp roasted pine nuts
1 Preheat oven to 220°C. Thinly slice aubergines and arrange on a baking sheet. Sprinkle with olive oil and roast until one side begins to turn brown. Turn over, return to oven to cook other side.
2 To make a sauce, mix together remaining ingredients, season and add extra vinegar and olive oil to taste.
3 Place aubergine slices in a shallow bowl and pour over sauce. Allow it to stand for about an hour before serving with salad and crusty bread.
