Mar­i­nated aubergine strips

Prep time: 15 mins Cook­ing time: 20 mins, plus 1 hour stand­ing time Serves 4-6

2 large aubergines Olive oil, as needed 3 fresh bay leaves, crushed 1 lemon, juice and zest of 3 gar­lic cloves 1 tbsp bal­samic vine­gar 1 tbsp red grape vine­gar Pinch of su­gar 2 tbsp cur­rants 1-3 red chill­ies, chopped 3 tbsp roasted pine nuts


1 Pre­heat oven to 220°C. Thinly slice aubergines and ar­range on a bak­ing sheet. Sprin­kle with olive oil and roast un­til one side be­gins to turn brown. Turn over, re­turn to oven to cook other side.

2 To make a sauce, mix to­gether re­main­ing in­gre­di­ents, sea­son and add ex­tra vine­gar and olive oil to taste.

3 Place aubergine slices in a shal­low bowl and pour over sauce. Al­low it to stand for about an hour be­fore serv­ing with salad and crusty bread.
