2 tbsp ground cumin 1 lemon, juice and zest of 4 tbsp olive oil 1 tsp chilli flakes 2 garlic cloves, crushed 4 chicken breast fillets 4 burger rolls, toasted 120g tzatziki Lettuce leaves 1/2 red onion, sliced Fresh mint Vegetable crisps or potato wedges, to serve
1 In a small bowl, whisk together the cumin, lemon juice and zest, olive oil, chilli flakes and garlic. Rub on to the chicken breasts.
2 heat a frying pan until smoking hot and cook chicken breasts on both sides until cooked through.
3 to assemble, spread rolls with tzatziki, top with lettuce, chicken breast, red onion, mint and more tzatziki. Serve with vegetable crisps or potato wedges.
