Chicken burg­ers

Serves 4 Prep time 10 mins Cook­ing time 15 mins

2 tbsp ground cumin 1 lemon, juice and zest of 4 tbsp olive oil 1 tsp chilli flakes 2 gar­lic cloves, crushed 4 chicken breast fil­lets 4 burger rolls, toasted 120g tzatziki Let­tuce leaves 1/2 red onion, sliced Fresh mint Veg­etable crisps or potato wedges, to serve

Method

1 In a small bowl, whisk to­gether the cumin, lemon juice and zest, olive oil, chilli flakes and gar­lic. Rub on to the chicken breasts.

2 heat a fry­ing pan un­til smok­ing hot and cook chicken breasts on both sides un­til cooked through.

3 to as­sem­ble, spread rolls with tzatziki, top with let­tuce, chicken breast, red onion, mint and more tzatziki. Serve with veg­etable crisps or potato wedges.
