Chicken and green bean salad

4 chicken breasts Olive oil 180g fine French beans, trimmed and blanched 50g wal­nuts, toasted, roughly chopped red-leaf let­tuce

FOR the DRESS­ING:

75g blue cheese 1/3 cup may­on­naise 1/2 lemon, juiced

Method

1 Pre­heat the grill to medium heat. Place the chicken breasts on a roast­ing tray, driz­zle with olive oil, sea­son with salt and pep­per and grill un­til browned and cooked through.

2 to make the dress­ing, place all the in­gre­di­ents in a blen­der and blitz un­til smooth.

3 to as­sem­ble, slice the chicken breasts, ar­range the green beans and let­tuce on the side and sprin­kle with wal­nuts. driz­zle with dress­ing and serve.
