Chicken and green bean salad
Serves 4 Prep time 5 mins Cooking time 15 mins
4 chicken breasts Olive oil 180g fine French beans, trimmed and blanched 50g walnuts, toasted, roughly chopped red-leaf lettuce
FOR the DRESSING:
75g blue cheese 1/3 cup mayonnaise 1/2 lemon, juiced
1 Preheat the grill to medium heat. Place the chicken breasts on a roasting tray, drizzle with olive oil, season with salt and pepper and grill until browned and cooked through.
2 to make the dressing, place all the ingredients in a blender and blitz until smooth.
3 to assemble, slice the chicken breasts, arrange the green beans and lettuce on the side and sprinkle with walnuts. drizzle with dressing and serve.
