WHO’S THE DADDY?
Silvena Rowe’s simple Father’s Day feast
Lime juiceand chilli-marinated chicken fajitas
Serves 4 Prep time 10 mins Chilling time 30 mins – 2 hours Cooking time 15 mins 450g chicken breasts, sliced into thin strips 2 tbsp oil 1 lime, juiced 1 tbsp chilli powder 1 tsp cumin 1/2 tsp oregano 2 garlic cloves, crushed 2 onions, sliced 1 green pepper, sliced 1 red pepper, sliced Handful of coriander, chopped 4 tortilla wraps Guacamole, cheese and sour cream, to serve
1 Marinate the chicken in 1 tbsp oil, lime juice, chilli powder, cumin, oregano, garlic, salt and pepper and chill for at least 30 minutes or 2 hours if possible.
2 Preheat the grill to medium-high and grill chicken for 2 to 3 minutes per side until cooked. Reserve the marinade.
3 Heat the remaining oil in a pan. Add the onion and sauté until tender, about 5 minutes. Add the peppers and the reserved marinade. Cook until the peppers are tender, about 5 minutes. Remove from heat and add coriander.
4 When ready to serve, assemble fajitas using guacamole, cheese, sour cream and the prepared chicken.
