Sloppy joe burgers
Serves 4 Prep time 15 mins Cooking time 30 mins 1 tbsp oil 1 onion, diced 1/2 red pepper, diced 1 jalapeño, seeded and finely diced 2 garlic cloves, chopped 1 tsp cumin, toasted and ground 1 cup beef stock 500g minced beef 410g passata 2 chipotle chilli peppers in adobo sauce, chopped 1 tsp oregano 1 tsp smoked paprika 1/4 tsp cayenne 1 tbspWorcestershire sauce 1/4 cup tomato ketchup 1 tbsp lime juice 4 buns, halved Sliced, onions, jalapeños, cheese and salad leaves, to serve
1 Heat the oil in a large frying pan. Add the onion, pepper and jalapeño. Sauté until tender, about 5 minutes.
2 Add the garlic and cumin and cook until fragrant, about 1 minute.
3 Deglaze the pan with the beef stock, then add the beef, passata, chipotle chilli peppers, oregano, paprika, cayenne, Worcestershire sauce and tomato ketchup. Stir and simmer for 20 minutes.
4 Season with salt and pepper and mix in the lime juice.
5 Serve in buns with sliced onions, jalapeños, cheese and salad leaves.
