Sloppy joe burg­ers

Serves 4 Prep time 15 mins Cook­ing time 30 mins 1 tbsp oil 1 onion, diced 1/2 red pep­per, diced 1 jalapeño, seeded and finely diced 2 gar­lic cloves, chopped 1 tsp cumin, toasted and ground 1 cup beef stock 500g minced beef 410g pas­sata 2 chipo­tle chilli pep­pers in adobo sauce, chopped 1 tsp oregano 1 tsp smoked pa­prika 1/4 tsp cayenne 1 tb­spWorces­ter­shire sauce 1/4 cup tomato ketchup 1 tbsp lime juice 4 buns, halved Sliced, onions, jalapeños, cheese and salad leaves, to serve

1 Heat the oil in a large fry­ing pan. Add the onion, pep­per and jalapeño. Sauté un­til ten­der, about 5 min­utes.

2 Add the gar­lic and cumin and cook un­til fra­grant, about 1 minute.

3 Deglaze the pan with the beef stock, then add the beef, pas­sata, chipo­tle chilli pep­pers, oregano, pa­prika, cayenne, Worces­ter­shire sauce and tomato ketchup. Stir and sim­mer for 20 min­utes.

4 Sea­son with salt and pep­per and mix in the lime juice.

5 Serve in buns with sliced onions, jalapeños, cheese and salad leaves.
