Stir-fried prawns with Snow peas

250g prawns, peeled and de­veined 1 tsp salt 2 tsp lightly beaten egg white 2 tsps corn­starch mixed with 1 tbsp wa­ter 2 1/2 tbsp veg­etable oil 1 scal­lion, cut into short lengths 4-6 small slices fresh gin­ger root, peeled 100g snow peas, topped and tailed 1/2 tsp su­gar 1 1/2 tbsp Chi­nese stock or wa­ter 1 tbsp light soy sauce A few drops se­same oil

METHOD

1 Cut each prawn in half length­wise through the back, place in a dish, and add a pinch of salt, the egg white, and about half the corn­starch paste. Stir well to mix.

2 Heat the oil in a pre­heated wok, add the prawns and stir-fry for 30 sec­onds. Re­move from the wok.

3 Add the scal­lion, gin­ger and snow peas to the wok and stir-fry for 1 minute.

4 Add the prawns, su­gar and re­main­ing salt, and stir-fry for 2 min­utes. Mix in the stock or wa­ter and soy sauce, and bring to a boil, then add the re­main­ing corn­starch paste to thicken the sauce.

5 Sprin­kle with se­same oil and serve hot.
