Stir-fried prawns with Snow peas

250g prawns, peeled and deveined 1 tsp salt 2 tsp lightly beaten egg white 2 tsps cornstarch mixed with 1 tbsp water 2 1/2 tbsp vegetable oil 1 scallion, cut into short lengths 4-6 small slices fresh ginger root, peeled 100g snow peas, topped and tailed 1/2 tsp sugar 1 1/2 tbsp Chinese stock or water 1 tbsp light soy sauce A few drops sesame oil
1 Cut each prawn in half lengthwise through the back, place in a dish, and add a pinch of salt, the egg white, and about half the cornstarch paste. Stir well to mix.
2 Heat the oil in a preheated wok, add the prawns and stir-fry for 30 seconds. Remove from the wok.
3 Add the scallion, ginger and snow peas to the wok and stir-fry for 1 minute.
4 Add the prawns, sugar and remaining salt, and stir-fry for 2 minutes. Mix in the stock or water and soy sauce, and bring to a boil, then add the remaining cornstarch paste to thicken the sauce.
5 Sprinkle with sesame oil and serve hot.
