Three-bean salad with feta

FOR THE SALAD 400g can white beans, drained and rinsed 400g can kid­ney beans, drained and rinsed 400g can fava beans, drained and rinsed 2 cel­ery stalks, finely chopped 1/2 red onion, finely chopped 1/2 bunch fresh flat-leaf pars­ley, finely chopped 1 tbsp fresh rose­mary, finely chopped 200g feta cubes, prefer­ably Bul­gar­ian

FOR THE DRESS­ING 1/3 cup ap­ple cider vine­gar 1 tbsp honey 4 tbsp olive oil 1 1/2 tsp salt 1/4 tsp black pep­per 1 red chilli, sliced Lemon wedges, to gar­nish

1 To make the salad, mix to­gether all the in­gre­di­ents, ex­cept the feta.

2 To make the dress­ing, whisk to­gether all the in­gre­di­ents.

3 Pour the dress­ing over the salad, toss and re­frig­er­ate to al­low the salad to soak up the flavours of the dress­ing.

4 When ready to serve, add the cheese and toss. Gar­nish with lemon wedges.
