PRAWNS WITH LIME AND LEMON DIP

1 egg 2 tbsp milk 1kg medium-sized prawns, cleaned and deveined, with tails intact Flour, for coating 300g desiccated coconut Oil, for frying
FOR DIP, MIX TOGETHER
250ml mayonnaise 1 lime, zest and juice of 1/2 lemon, zest and juice of
1 Beat the egg and milk together.
2 Coat the prawns with flour and then dip in the egg mixture first, then in the coconut, shaking off any excess.
3 Deep-fry prawns in medium hot oil until golden brown and cooked, about 1 minute per side. Drain on paper towels.
4 Serve hot, with the prepared dip.
