PRAWNS WITH LIME AND LEMON DIP

1 egg 2 tbsp milk 1kg medium-sized prawns, cleaned and de­veined, with tails in­tact Flour, for coat­ing 300g des­ic­cated co­conut Oil, for fry­ing

FOR DIP, MIX TO­GETHER

250ml may­on­naise 1 lime, zest and juice of 1/2 lemon, zest and juice of

METHOD

1 Beat the egg and milk to­gether.

2 Coat the prawns with flour and then dip in the egg mix­ture first, then in the co­conut, shak­ing off any ex­cess.

3 Deep-fry prawns in medium hot oil un­til golden brown and cooked, about 1 minute per side. Drain on paper tow­els.

4 Serve hot, with the pre­pared dip.
