Traditional Turkish kofte

800g minced lamb 1 onion, grated 2-3 garlic cloves, crushed 1/2 cup finely chopped fresh parsley 1/2 tsp chopped thyme 1/2 tsp cumin 1/2 tsp chilli flakes Yogurt, to serve
1 In a bowl, mix together all the ingredients and season with salt and pepper. Knead until the ground lamb absorbs the ingredients.
2 Divide the mixture into lime-size balls, flattening the balls slightly to ensure that they cook evenly.
3 Grill the koftes on a hot griddle or a frying pan until golden brown and cooked through. Drizzle with yogurt and serve with salad.
