Tra­di­tional Turk­ish kofte

800g minced lamb 1 onion, grated 2-3 gar­lic cloves, crushed 1/2 cup finely chopped fresh pars­ley 1/2 tsp chopped thyme 1/2 tsp cumin 1/2 tsp chilli flakes Yo­gurt, to serve

1 In a bowl, mix to­gether all the in­gre­di­ents and sea­son with salt and pep­per. Knead un­til the ground lamb ab­sorbs the in­gre­di­ents.

2 Di­vide the mix­ture into lime-size balls, flat­ten­ing the balls slightly to en­sure that they cook evenly.

3 Grill the koftes on a hot grid­dle or a fry­ing pan un­til golden brown and cooked through. Driz­zle with yo­gurt and serve with salad.
